Chicken marengo
Preparation time:
30 minutes
Tiemno cooking: 1 v 1 / 2 hours
Ingredients
1 chicken and half a kilo
2 tbsp oil
1 tbsp butter and other
Flour
1 onion, chopped
Few sprigs parsley
1 green onion
1 / 2 clove garlic
1 bay leaf
1 leaf of rosemary
1 cup of broth
1 cup dry white wine
4 tomatoes peeled and
Seeds, chopped
Salt and pepper
Preparation:
Clean the chicken and cut into wedges. Brown in a skillet with butter and oil in half. Add onion, garlic and parsley and chopped green onions, bay leaves and rosemary. Once the garlic golden, remove it. Over flour and mix well. Season with salt and pepper to taste. Add tomatoes and water to wine. Let it evaporate a little and add the broth by tablespoons. Cover and simmer gently for 1 hour or so. Serve with white rice.
Suggestions:
About 10 min. before it is ready, you can add the chicken 100 gm. cut up mushrooms or 1 can of peas.
