Cold Pudding
Ingredients:
1 Kg potatoes
1 large bell pepper
2 tomatoes
1 hard boiled egg
3 tbsp. peas mayonnaise, pickles and olives
Preparation:
Cook the potatoes in salted water. Drain well and process along with chili. Add the mayonnaise and all the other chopped ingredients. Mix everything very well. Pour into a greased spring form pan with oil. Let stand awhile and cold unmold.
Suggestions:
Can be served with a small amount of mayonnaise. Garnish with shredded lettuce and black olives.
