<p>Topping:<br />
1 cup Cheddar cheese, grated 250 mL<br />
1/4 cup dry bread or cracker crumbs 50 mL</p>
<p>In a large skillet, heat 2 tablespoons (25 mL) oil over medium heat: cook onion and mushrooms until softened. Remove to mixing bowl. Add remaining tablespoon of oil to hot saucepan and cook chicken pieces (skin removed) until golden brown; remove to bowl. Add wine to skillet, stirring to deglaze pan; add soup, broth, sour cream and curry powder, whisking together until blended. Stir into chicken and mushroom mixture along with cooked rice, peas and green onions; mix until well blended. Season with salt and pepper to taste. Transfer mixture to greased 10-cup (2.5 L) baking dish or casserole. Top with a mixture of cheese and crumbs. Bake uncovered in 350 degree F (180 degree C) oven for 30 to 40 minutes, or until mixture bubbles and topping is golden brown.</p>
<p>Makes 6 to 8 servings.</p>

<p>This cake recipe was one that I threw together the other day and is quite good if you like a strong lemon flavor in your cake. My family and friends enjoyed it and I think you will, too. Take care and see everyone again soon. Regards, Cookin&#8217; Dad</p>
<p>1 1/2 cups (3 sticks) margarine<br />
1/4 cup cream cheese, softened (113 grams)<br />
3 cups granulated sugar<br />
5 eggs<br />
3 cups sifted all purpose flour<br />
1/2 teaspoon baking powder<br />
1 teaspoon vanilla extract<br />
1 tablespoon lemon extract<br />
1/2 teaspoon almond extract<br />
1/2 cup freshly squeezed lemon juice</p>
<p>Preheat oven to 325 degrees F.</p>
<p>Sift dry ingredients together.</p>
<p>Cream margarine, cream cheese and sugar. Add eggs one at a time, beating well after each addition. Next, add dry mixture and lemon juice alternately, starting and ending with dry mixture. Please note that when it is time for your last flour addition, batter may be very thick and you may have to mix by hand. Lastly, stir in lemon, vanilla and almond extracts. Pour batter into greased and floured standard Bundt pan. Bake at 325 degrees F for about 1 hour 15 minutes. Be careful not to overbake!</p>
<p>NOTE: I sprinkled cake with powdered sugar after it finished baking.</p>

<p>Drop batter in 3 or 4 dollops over nut mixture; gently spread with spatula to evenly cover. Be careful not to lift nut mixture out of place.</p></div>

<p><strong>2.</strong> On waxed paper, combine baking powder, baking soda, salt, and 3 cups flour. In small bowl, combine pecans, brown sugar, cinnamon, and remaining flour.</p>
<p><strong>3.</strong> In large bowl, with mixer at medium speed, beat granulated sugar, butter, and 2 teaspoons vanilla until creamy. Beat in eggs, 1 at a time. Alternately beat in flour mixture and sour cream, beginning and ending with flour mixture. Beat just until blended, occasionally scraping bowl.</p>
<p><strong>4.</strong> Evenly spread 2 cups batter in prepared pan; sprinkle with half of nut mixture. Top with 2 cups batter. (See <strong>tip</strong> below.) Sprinkle with remaining nut mixture, then spread with remaining batter.</p>
<p><strong>5.</strong> Bake cake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on wire rack 10 minutes. With small metal spatula, loosen cake from pan; invert onto rack to cool completely.</p>
<p><strong>6. Prepare glaze:</strong> In small bowl, stir confectioners&#8217; sugar, milk, and 1/2 teaspoon vanilla until smooth. When cake is cool, transfer to cake plate. Use spoon to drizzle glaze decoratively over cake. Let glaze set.</p>
