Mountaineering green bean
Ingredients:
1 kg. of green beans 7 eggs hard
2 slices of ham lcm. wide oil
salt
vinegar
pepper
Preparation:
Wash and prepare the green beans and put them into boiling salted water about 20 minutes. Drain and cut into slices six eggs and ham in large dice. Prepare a vinaigrette. In a round fountain, arrange on a mountain green beans and diced ham on top. Surround with slices of boiled egg. Drizzle with the vinaigrette, sprinkled with chopped egg yolk and remaining hard serve.
Tip:
Peas can be added both in the preparation and presentation. Hard-cooked eggs should be cold to cut, this will prevent disarm. For a different presentation 5 egg yolks can be shredded with care. Leave cool.
