Muchines cassava
The muchines cassava pancakes are delicious Ecuadorian style that can be produced easily and surely you’ll like the whole family.
Ingredients of cassava muchines (4 persons)
250 g. fresh cheese.
1 kg. cassava (manioc called elsewhere)
2 eggs.
1 onion, not too big.
Achiote (elsewhere known as Onoto) or paprika.
Olive oil.
Salt and pepper.
A little fist of parsley.
Production of cassava muchines
Peel the yuca and cut into small pieces and put them to boil with enough water until fork biting with a notice that they soften.
While cooking cassava leaves, we whisking the two eggs in a bowl and chopping onions, parsley and grated cheese. We left everything apart.
Once list cassava, went through the blender and add the beaten eggs, annatto or paprika and salt to taste.
We take the dough and give it an elongated shape and put in a tablespoon of minced onion, parsley, a little grated cheese and close the dough.
