Ratatouille with pork chops

pork chopsFrom the Spanish origin “Ratatouille” is an excellent side dish for any meat or fish. Very economical and easy to prepare, we invite you to try this time accompanied by some tasty pork chops.

We need:
1 medium onion.
1 clove of garlic. 
1 green pepper.
1 yellow pepper.
1 medium zucchini or squash.
100 grams of mushrooms.
3 medium tomatoes, chopped.
2 tablespoons tomato paste.
2 teaspoons mixed dried herbs.
1 teaspoon powdered sugar.
4 lean pork chops.
Salt and pepper.

Peel and chop the onion and garlic. Deseed peppers and cut into small pieces. We removed the ends of the zucchini or squash and cut into cubes. Wash mushrooms well and cut into halves.

In a saucepan place all the vegetables and add the tomato and tomato paste. Add the dried herbs, sugar and pepper. Bring to the boil, cover and let simmer for about 20 minutes.

We heat over medium heat on grill or a nonstick skillet with vegetable spray. Sprinkled the chops on both sides, sprinkle with dried herbs and cook turning them until they are cooked. We put the meat on paper towel to drain. Serve with the ratatouille.

Tips:

The vegetable is vegetable oil spray aerosol that allows you to reduce fat in your recipes, you can find in most supermarkets or in this case, substitute a few drops of vegetable oil.

It is not necessary that they are green and yellow peppers, you can combine these with the red or to use only one of those three.
