Sauce Normande
The old Norman, better known as Vikings, were famous for the domain they had from the Nordic Seas and its resources. Part of his legacy was the importance it had provided for them the fish, whose benefits are recognized today.
Maybe some of that wisdom is able to enjoy this tasty sauce, prepared in the manner of the great sea explorers.
To prepare you need:
1 tbsp butter
1 tbsp flour
2 cups fish stock or 1 / 2 kg of fish
1 tbsp lemon juice
1 cup whipping cream
2 yolks
Cook the seasoned fish in 2 cups of water and then reserve the broth.
In another pan over low heat we butter and flour, stirring until browned always. Add the broth to a few, always moving.
Apart mix the yolks with the lemon juice and 1 tbsp water and add it to this. We let it cook a little and add the cream, mix well and remove from heat. If you want you can raise your chopped onion.
We serve poured over fried fish and if you want to in a sauce boat. You can decorate the dish with slices of melon and flowers, is the usual Norman …
