Seasonal fruits gratin
Ingredients:
Serves 4
600 gr. white grape
6 egg yolks
200 gr. blackberry
2 glasses of white wine
6 tablespoons sugar
cinnamon
a pinch of pepper
mint leaves
Preparation:
Boil wine in a saucepan and 4 tablespoons of sugar. Keep the fire until he removes the sugar.
Peel the grapes with a knife or scalded briefly in a pan of boiling water.
Put the yolks in a bowl and put them to fire the bath. Mix them and slowly pour the wine with sugar. Keep the fire stirring (gently) until thickened.
Cool the cream by placing the bowl inside another, which you’ve placed a little water and some ice. When cold, sprinkle with cinnamon and a pinch of pepper powder and mix.
Take 6 individual containers suitable for the oven, placed inside each, some blueberries, grapes and put over the cream delivers. Sprinkle with remaining sugar and baked in the oven until browned surface. Decorate with mint leaves, a little cinnamon and serve hot.
