Spinach Crepes with Curried Crab

Spinach Crepes with Curried CrabVery simple and versatile, pancakes mass allows for infinite combinations. As we feel like we can enjoy hot or cold pancakes with sweet or savory fillings, simple or more elaborate how are you exquisite spinach crepes stuffed with curried crab flesh.

We need:
115 g of wheat flour or buckwheat.
1 large egg, beaten.
1 1 / 4 cup of skim milk.
125 gr chopped spinach.
2 tablespoons vegetable oil.

Filling:
350g cooked white crab meat.
1 teaspoon curry powder.
1 tablespoon mango chutney.
1 tablespoon mayonnaise.
2 tablespoons plain yogurt.
2 tablespoons chopped fresh coriander or cilantro.

Sifting the flour 3 times. We make a hole in the center and pour egg mixture. Gradually incorporate the milk and finally the spinach. We form a paste and pour a bowl and let rest about 30 minutes.

In a bowl mix all filling ingredients except the cilantro, cover and reserve in refrigerator.

We beat the dough. We spread a small skillet with cooking, heating and pouring a little dough, covering the base. Cook 1 to 2 minutes, until set, we turn and let another minute. PREPARATION 8 pancakes and put them on a plate on top of each other separated by filter paper.

Add the cilantro to the filling, put some of this in each of the pancakes and fold into quarters. Serve hot with salad greens and lemon wedges.

Tips:

Instead of the pulp of crab or shrimp can use langostinos peeled and cooked.
