St. James Mini zucchini

12Ingredients:
Serves 4
2 courgettes
8 smoked cod fillets
8 slices of cheese
flour
beaten egg
extra virgin olive oil
- For the tomato sauce:
1 can tomato 500 gr.
1 onion
1 green pepper
2 cloves garlic
salt
sugar

Preparation:
Chop garlic, onion and pepper and put them to soften in the pan quickly with a little oil. Add the tomatoes, a pinch of salt and a pinch of sugar and fry briefly. Close the lid and cooking everything together for 5 minutes. When done, pass the puree and reserve passes.

Clean the zucchini and cut them into elongated slices. Transfer them briefly with a frying pan with oil to make it a little.

Mount a piece of zucchini, put up a piece of cod over a piece of cheese and a zucchini.

St. Jacob spends the flour and beaten egg and fry them gently in a pan with oil. Serve in the center of a plate and put a little tomato on the side. Serve the remaining sauce in a bowl.
