Trout with onion
Ingredients:
Serves 4
4 trout in 200 gr.
1 onion
2 potatoes
1 tomato
5 leaves of basil
2 cloves garlic
2 lemons
extra virgin olive oil
vinegar
saltÂ
Preparation:
Peel and finely chopped tomatoes (if it is large enough for half). Pica basil leaves and place them in a bowl. Add oil, vinegar and salt to taste and let marinate.
Peel the potatoes, cut them into thin slices. Put in a small skillet a little oil and arrange potato slices on the bottom forming a flower. Dora on one side and turn carefully. Repeat until get the 4 cakes.
Peel, slice the onion into thin julienne strips and cook in another pan.
Clean and filleted trout. Peel the garlic, cut them into slices and put them to brown in a skillet with oil. Add seasoned trout fillets and fry briefly on both sides (first with the skin side up).
Serve a cake on each plate, 2 trout fillets, a little onion Poached and decorate with half a lemon.
