Turkey in orange sauce with rice and vegetables
Low in fat and cholesterol free, turkey meat can be prepared in the same way as chicken, with the advantage of being healthier. Let us book your profits for year-end festivities and let us encourage preparing this delicious and nutritious recipe.
We need:
1 tablespoon olive oil .
1 medium onion, minced.
450g lean turkey meat cut into strips or dice.
300 ml of orange juice.
1 bay leaf.
225g of broccoli florets.
1 zucchini, summer squash or zucchini Italian diced.
1 large orange.
350g cooked brown rice.
20 g pitted black olives.
Salt and pepper.
Heat oil in large skillet and fry the turkey with the onion for about 5 minutes, stirring until they are slightly golden color.
Pour orange juice and add the bay leaf, salt and pepper. Bring to boil and cook over low heat for 10 minutes.
In a large pot boil water and cook the broccoli for 2 minutes with the lid on. Add the zucchini and cook 3 minutes more. Drain and set aside.
Peel oranges removing all the white part and cut into thin slices then split in half.
Add the broccoli, zucchini, rice and oranges to skillet and cook about 3 minutes, until hot. Serve hot decorating with cut olives in quarters.
